Black Bean Salsa

Clean and wash two cups of black beans, place in crock pot or on stove and cook as usual - optional:add two cloves of garlic while cooking.
When done let beans cool completely, drain about 99% of water out.
Roast on a grill any variation of the following, as least two to three of each, making sure you brown as much of the pepper as possible:
> Bell peppers
> poblano
> pasillas
> Long anaheim peppers
> jalepenos
Must roast:
> 1 sliced onions
> 3 tomatoes
chopped cilantro
maybe a smidgen of cumin
Let cool and peel all the peppers. Remove all the seeds and stems. Chop all peppers, onions and tomatoes. Add to beans. Salt and pepper to taste; Chill for two hours. Serve with chips, carne asada, or any picnic.
