3 eggs, separated
1 (6-oz.) can crab meat, drained & rinsed
1 tsp. lemon juice
2 tbsp. green onions, sliced
1 tbsp. chopped pimento
1/4 tsp. salt
Dash cayenne
2 tbsp. mayonnaise
2 tsp. dijon mustard
8-10 slices whole wheat bread, crusts removed
1/2 cup shredded jack cheese
Sliced ripe olives
Recipe
In a medium bowl, beat egg yolks until thick and lemon-colored. Blend in crab meat, lemon juice, green onions, pimento, salt, cayenne, mayonnaise and mustard.
In a medium bowl, beat egg whites until stiff but not dry; fold into egg yolk mixture.
Spread about 1/4 cup mixture on each bread slice; place on ungreased cookie sheet. Sprinkle each with cheese and garnish with olive slices. Bake at 350 about 30 minutes.
