Dirty South Sausage Balls

2 lbs. pork breakfast sausage (1 reg. & 1 hot)
1/2 lb. cream cheese,softened
1/4 cup snipped chives
1/2 tsp. cayenne
salt and pepper to taste
juice of 1 lemon
3 cups bread crumbs
2 sheets frozen puff pastry
sliced scallions for garnishRecipe
Preheat oven to 400º.
In a large bowl,combine sausage, cream cheese, chives, cayenne, salt, pepper and lemon juice. Fold bread crumbs into meat mixture until fully combined.
Roll into 1 inch balls. Wrap a 1-1/2 inch square of pastry around each ball,stretching to cover. Pinch seams to seal.
Place seam sides down on a greased cookie sheet and bake for 10 minutes. Serve garnished with scallions.
