    1/3 cup soft butter
    1 large clove of garlic
    6.5 oz jar of marinated artichoke hearts
    1 cup of seeded, diced tomato
    1/3 cup parm cheese
    2 green onions with tops, thinly sliced
    1 tsp dried oregano
    4-oz crumbled feta cheese
    5 English Muffins, split

    Recipe



    Combine the butter and garlic. Set aside. Dain the artichokes, reserving 1 Tbs. Marinade. Chop the artichokes and set aside.

    Combine the artichokes, tomato, 3 Tbs parm cheese, green onions, oregano and reserved marinade. Gently stir in feta cheese.

    Lightly toast the muffins halves, spread with the garlic butter. Spoon artichoke mixture on top, dividing evenly.Sprinkle with remaining parm cheese. Broil 4-6" from the heat, about 5 minutes. To serve cut each muffin in 1/2.
