Fried Onion Rings II

1 large sweet onion
1 1/4 cups flour
1 tsp. salt
1/4 tsp. pepper
1 tbsp. vegetable oil
2 beaten egg yolks
3/4 cup flat beer
Recipe
Combine dry ingredients; add oil & egg yolks, blending gently. Gradually add beer, stirring just enough to blend.
Allow batter to rest 2 to 12 hours under refrigeration.
Peel off outer layers of onion; cut into slices however thick you like. Coat with batter and allow excess to drip off. Fry in oil at 365 until golden. Drain on paper towels. Serve immediately.
