1 14-oz. can hearts of palm
3/4 c. parmesan cheese, grated
3 T. green onion, finely chopped
2/3 c. mayo
1/4 c. sour cream
2 T. minced pimento
1/8 t. cayenne pepper
Recipe
Drain hearts of palm and chop finely.
Save 1 T green onion and 1 T parmesan for garnish.
Mix hearts of palm with the rest of the ingredients.
Spread mixture into medium-sized baking dish. Garnish with cheese and onion. Bake 350F until hot and bubbly, about 20 minutes. Pop under broiler to brown.
