A dump and wait dish that is tasty and low-fat.

1/2 cup vegetable oil
1/4 cup red wine vinegar
1/2 teaspoon salt
1/8 teaspoon hot pepper sauce
2 cans black beans, drained and rinsed
2 cans Mexican-style corn, drained
1/2 cup scallion, chopped
1 large ripe red tomato, finely chopped
1/2 each red and green bell peppers, chopped (or sub 1 diced avocado for green pepper)
Recipe
Combine first five ingredients in a large bowl. Add beans, corn, and scallions. Marinate, stirring a few times, at least three hours, but no more than 6.
Just before serving, add tomato and peppers (and avocado, if using).
Serve with baked tortilla chips.
