2 lb. Velveeta® Pasteurized Prepared Cheese Product, finely chopped
8 hard-cooked eggs, chopped
2 Tbs. sweet pickle relish
2 small jars pimientos, drained, chopped
Ingredients for cooked dressing:
2/3 cup cider vinegar
1/2 cup water
pinch salt
2 eggs
3/4 cup sugar
2 Tbs., plus 1 tsp. flour
1 to 2 cups shredded extra-sharp cheddar cheese (optional)
Recipe
Place small cubes of Velveeta® in a large mixing bowl. (Never try to shred Velveeta®!) Add finely chopped eggs, pickles and pimientos.
For dressing, add vinegar, water and salt to a nonstick medium saucepan. Bring to boiling.
In a bowl, blend both eggs with sugar and flour, then stir into the boiling mixture until thickened. While dressing is very hot, gradually add to the diced Velveeta mixture and stir nearly smooth. Cool slightly and place in a refrigerator container.
For an even cheesier treat, sprinkle shredded cheddar cheese over portions before serving.
Yield: About 4 cups spread
