Roasted Red Peppers

You can do this on a grill, right over a gas flame, but I have electric so I do it under the broiler.
Cut peppers in half, core and seed. Flatten on cookie sheet covered with foil, making cuts if necessary to get them to lie flat. Broil until charred mostly black, remove and place in zip lock bag for 15 minutes to steam. Remove and, taking a small sharp knife, the skins will easily peel off. Slice or chop to desired shapes.
I do this when they are cheap and freeze them flat on a cookie sheet, then place them in a labeled and dated freezer bag.
You could marinate them in olive oil and herbs or just drizzle the oil over them with any herbs desired.
