MEATBALLS:
1 lb. ground beef
1 cup soft bread crumbs
1 egg, slightly beaten
1 Tbls. minced onion
2 Tbls. milk
1/4 tsp. garlic powder
salt and pepper to taste
SAUCE:
20 oz. can pineapple chunks in juice
1/2 cup water
1/2 cup cider vinegar
1/4 cup brown sugar
1 tsp. soy sauce
2 Tbls. cornstarch
1 small green pepper, cut into 1/2 inch chunks
5 oz. sliced water chestnuts
Recipe
For the meatballs combine all meatball ingredients, form into walnut-sized balls and brown in skillet or in the oven. Drain excess fat.
For the sauce, drain the pineapple chunks, reserving 3/4 cup of the juice (if there is not enough, add water to make 3/4 cup).
Combine juice, 1/2 cup water, vinegar, soy sauce, brown sugar and cornstarch in a large saucepan or pot and stir until sugar and cornstarch disolve. Cook over low heat until thick and bubbling, stirring constantly.
Add green peppers, meatballs, water chestnuts and 1 cup of pineapple chunks. Heat until meatballs are hot, stirring frequently.
