Tequila Lime Shrimp

2 pounds raw shrimp, peeled, deveined
1/4 cup olive oil
3 tbsp. finely chopped onion
3 cloves minced garlic
1/4 cup tequila
1/4 cup lime juice
2 tbsp. snipped fresh cilantro
1/8 tsp. salt
Recipe
Heat olive oil in skillet over medium heat and add onion and garlic. Cook about 3 minutes, or till tender. Add shrimp and tequila and bring to a boil. Continue to boil gently till shrimp turns opaque, approximately 3-5 minutes, stirring occasionally. Transfer shrimp mixture to a bowl and add lime juice, cilantro and salt. Toss to combine. Refrigerate for 2 hours, stirring occasionally.
Recipe serves 10-12 appetizer portions.
