Gary's Brisket Rub and Sauce

Rub:
1/4 cup paprika
1/2 cup brown sugar
2 tsp coarse salt
1 tsp celery salt
1 tsp black pepper
1-3 tsp cayenne pepper
1 tablespoon dry mustard
1 tsp garlic powder
1 tsp onion powderRecipe
For a 10-lb brisket, mix all the above ingredients together. Rub generously all over the meat and let it sit for about an hour. Build your fire and place the brisket over the hot side, and sear 30 minutes on each side. Move off to the cool side of the grill and wrap in foil. Cook for about 5-8 hours depending on the size of the meat. During the last hour, remove from foil, and baste every 10 minutes with the following sauce:
Sauce:
One bottle of barbecue sauce, your favorite, and add:
red wine vinegar
honey
apple juice
Mix all ingredients in a saucepan, and simmer until reduced to a thick syrup. Takes awhile to do this. He has no idea of the amounts in the recipe, but again, it'll be good no matter what. Dip a piece of white bread in it to taste it- the tried-and-true way to tell.
