    3-Potato Salad

    List of Ingredients




    3 med gold Yukon potatoes, peeled and cubed*
    3 med unpeeled red potatoes, cubed
    1 large sweet potato, peeled and cubed
    1 med onion, chopped (I left it out)
    1 cup mayonnaise
    2 T sugar
    1 T white vinegar
    1 t. salt
    3/4 t. dill weed
    1/2 t. pepper

    *can substitute russets

    Recipe



    Place the potatoes in a Dutch oven; cover with water. Cover and bring to a boil. Reduce heat and cook for 20-30 min or until tender. Drain and cool.

    Place potatoes in a large bowl; add onion. In a small bowl, combine the remaining ingredients. Pour over potato salad and toss gently to coat. Cover and refrigerate overnight.

    15 servings.
