Balsamic Roasted Red Potatoes

List of Ingredients
2 Tbsp Olive Oil—or canola oil
2 to 2 1/2 Lbs Small Red Potatoes—halved or quartered
2 Tbsp Finely Chopped Green Onions
1 Tbsp Minced Garlic
1 Tsp Dried Thyme
1/2 Tsp Ground Rosemary
1/8 Tsp Ground Nutmeg
1/4 C Balsamic Vinegar
3/4 Tsp Salt
1/2 Tsp Fresh Ground Black Pepper
Recipe
In a large nonstick skillet, heat oil over med-high heat. Add potatoes, onion and garlic; toss to coat. Add the thyme, rosemary and nutmeg; toss well. Cook and stir for 2-3 minutes or until potatoes are hot.
Transfer to a 15x10x1” baking dish, sprayed with Pam. Bake @ 400 for 25-30 minutes or until potatoes are golden and almost tender. Add the vinegar, salt, and pepper; toss well. Bake 5-8 mins longer or until potatoes are tender.
