    Cuban Black Beans

    List of Ingredients

    1 lb. black beans
    seasoned salt as needed
    black pepper as needed
    1 - 2 tbsp. olive oil
    1 red bell pepper, chopped
    1 yellow onion, chopped
    2 - 3 jalapenos, finely chopped
    2-3 cloves garlic, minced
    ½ - 1 tsp. oregano

    Recipe

    Wash beans and soak overnight. Drain and rinse; place in large kettle with lots of water and bring to boiling. Add seasoned salt and black pepper as desired. Reduce heat to simmer.

    Heat olive oil in skillet and saute pepper, onion, jalapenos, garlic and oregano until tender and the garlic flavor seeps through; add to black beans and simmer 3-4 hours.

    "I saute the veggies with garlic and oregano in olive oil. Meanwhile, I have the beans boiling in a pot with season salt and black pepper. Once veggies are sauteed and garlic seeps into veggies, add to black beans. Uses a lot of water and cooks for about 3 hours. Don't forget to soak the beans overnight."
