List of Ingredients
1 Lb Dry Red Beans
Water To Cover
2 Ham Hocks
3 Med Onion -- Chopped
2 Ribs Celery -- Chopped
3 Cloves Garlic -- Minced
2 Bay Leaves
Salt And Pepper -- To Taste
1/2 C Butter -- Melted
Cooked Rice
Recipe
Soak beans overnight in a large bowl. Drain. Place in a large pot with ham hocks, onions, celery, garlic and bay leaves. Cover with cold water. Cover with lid. Bring to a boil. Reduce, simmer about 3 hours, adding more water
if needed. Remove 2 cups beans from pot and mash. Return to pot, stir well. Season with salt and pepper. Add butter. Heat until butter has melted. Serve with hot cooked rice. Serves 4-6
