2 - 3 large potatoes, scrubbed or peeled
cold salt water
oil as needed
plain or seasoned salt
Recipe
Cut potatoes in strips, either by hand or using a french fry cutter. Place in salt water as you're cutting them so they don't turn brown.
Fill oil in a deep pan to about half full or use a deep fryer. Heat to about 360.
Drain potatoes & pat dry.
Cooking just a few at a time, fry potatoes until they just begin to turn golden. Remove from oil & drain on paper towels. Continue frying in small batches until all are fried.
This is just the halfway point, and the fries may be kept at this stage for several hours until ready to serve. Just before serving, fry them (again in small batches) in 360° oil, until medium golden in color. Drain on paper towels and immediately season lightly with salt. Serve.
