Golden Potato Casserole

6 medium potatoes
1/4 cup butter
2 cups sour cream
2 cups cheddar cheese, shredded
1/3 cup green onion, chopped
1 tsp salt
1/4 tsp white pepper
2 tbsp butter
Recipe
Cook potatoes in skins - chill and peel. Shred into a large bowl.
In saucepan melt butter and add cheese; stir till melted - then remove from heat. Stir in sour cream, onions, salt & pepper; pour over shredded potatoes and turn lightly to blend.
Pour into buttered casserole dish; dot with butter on top. Bake at 350 for 35-45 minutes.
