Hashbrown Potatoes

Grate two or three potatoes (peeled or unpeeled). Drain the grated potatoes in a colander, then press out some more of the moisture with paper towels. Put them in a bowl and add 1 teaspoon salt. If you like onions with the hash browns, mince one and add it to the grated potatoes.
Heat oil in a large skillet on medium heat. Drop the potatoes into the oil and flatten with a spoon or spatula. Brown the first side for about 3 minutes, then turn. Don't try to turn it until the first side is brown--it will fall apart. Brown the second side for about 3 minutes.
Remove the hash browns from the skillet and drain on paper towels if desired. You can keep them warm in a 200 degree oven while you brown the rest of the potatoes.
