    List of Ingredients




    4 Ozs Diced Smoked Ham -- Cubed
    1 C Diced Onion
    1/2 C Diced Celery
    2 Cloves Minced Garlic
    2 C Chicken Broth
    4 Ozs Black Eyed -OR- Other Dark Peas -- Rinsed
    1 Bay Leaf
    4 Ozs Long-Grain White Rice
    1/2 Tsp Thyme
    1/2 Tsp Black Pepper

    Recipe



    If using sausage, brown in skillet. If using ham, add 1 tablespoon bacon drippings to skillet. Add onions and celery to grease. Saute until onion is golden. Add garlic; cook, stirring, 1 min more.

    Add broth, peas, bay leaf, and 2 cups of water; bring to a boil. Reduce and cover. Simmer 1 hour.

    Add rice, thyme and pepper; cover and simmer 15-20 more mins until rice is just tender.

    Remove from heat; let stand 10 mins, covered. Sprinkle with parsley and serve.

    Serving Ideas : Garnish with crispy crumbled bacon.

    NOTES: Can use 4 ozs. low-fat or turkey sausage instead of ham, but I'd add more ham and lots more black pepper.
