Candied Sweet Potatoes from Millie

Cut 6 medium sweet potatoes, cooked {not til "mushy" just til you can get the skins off n slice ~ Also, when I take off the fire, I immediately run cold water into the pan n allow to continue running til the water in the pan is cold. Then let the taters sit for a smidge to cool} and peeled, into ½-inch pieces Layer potatoes in a buttered 1½ quart casserole with:
¾ cup brown sugar
1 tsp. salt, and
¼ cup butter
ending with sugar and butter.

Bake uncovered at 375° about 30 minutes or till glazed Add ½ cup miniature marshmallows last 5 minutes; brown lightly.
Note: My rule of thumb is one sweet per person, so I adjust quantities that way. I generally cut the butter into square pats and distribute them over each layer evenly ~ I’ve found this soaks the butter through the casserole more evenly.
