1 box scalloped potato mix
15 oz. can chopped stewed tomatoes
1 1/2 cups boiling water
1/4 tsp oregano
4 ounces pepperoni
1 cup shredded mozzarella cheese

Combine the potatoes and the sauce packet in a greased 2 qt casserole. Add the oregano to the boiling water and pour into the potatoes; stir. Arrange pepperoni slices on top and sprinkle with cheese. Bake at 400 degrees for 30 minutes.
