Red Beans & Rice

List of Ingredients
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped green pepper
2 cloves minced garlic
2 cans red beans, drained & rinsed
1/2 lb. to 1 lb. smoked sausage (fully cooked)
8 ounces tomato sauce
1 tsp. worcestershire sauce
1/8 tsp. cayenne
1/4 tsp. hot pepper sauce
3 cups hot cooked rice
sliced green onion garnish
Recipe
Saute onion, celery, bell pepper & garlic for 2 - 3 minutes. Add beans, sausage, tomato sauce, worcestershire, red pepper & pepper sauce. Reduce heat; cover & simmer 15 minutes. Spoon beans into serving bowls; top each with 1/2 cup rice. Top with green onions and serve with hot pepper sauce on the side.
