Roasted Potatoes & Various Colored Peppers w/Onion Soup Mix

2-4 Yukon Gold Potatoes, washed & cut in chunks, but
not peeled
2-4 sweet peppers, either green, red, orange or yellow (if you like all four, use 1/2 of each)
1/2 pkg powdered onion soup/dip mix
1/4 cup olive oil or vegetable oil
Recipe
Combine ingredients and bake in casserole dish at 350° until vegetables are tender, stirring to keep from sticking.
If you prefer, you can omit the soup mix and substitute 1 large sweet onion, sliced. If using real onion, add salt and pepper to taste, don't add if using soup mix; it is already plenty salty.
