    List of Ingredients




    5 large cooked sweet potatoes, or 1 large and 1 small can
    2 tablespoons light margarine
    1/2 cup eggbeaters
    1 tsp. vanilla
    1/2 tsp cinnamon
    salt to taste
    1/4 cup Splenda
    2 tablespoons fat free half and half (can use milk instead)
    1/2 cup packed brown sugar
    1/4 cup chopped pecans

    Preheat oven to 400 degrees. Spray a 13x9" pan with Pam. In a large bowl, mix sweet potatoes that have been boiled, peeled, and quartered, with margarine, eggbeaters, vanilla, cinnamon, splenda, salt, and half and half. Place mixture in pan. In small bowl, combine brown sugar and pecans and sprinkle over potato mixture. Bake 30 minutes. (This is easily halved and baked in an 8x8" pan.)

    Serving size: 1/2 cup, about 125 calories.
