    Twice-baked Sweet Potatoes

    2 large scrubbed sweet potatoes, trimmed of threads and ends
    1/4 C shredded cheddar cheese
    Bottled bleu cheese dressing - hi fat or lo cal, your choice
    2 green onions, all parts chopped fine
    Black pepper

    Bake potatoes in oven until tender -- about 375 degrees for 45-60 minutes. Do not microwave these! Oven baking is key to releasing the sugars in the potatoes. Remove from oven to countertop -- leave oven on.

    After potatoes have cooled slightly on countertop, cut in half lengthwise. Scoop flesh out of the 4 halves, leaving a 1/4 inch wall for stuffing. Mash flesh with onions, enough bleu cheese dressing to be moist (about 2 tablespoons) and the black pepper. Mound the mashed mixture back into the potato shells. Top each loaded half with cheddar cheese, and return to oven. Bake until cheese is bubbly, about 10 minutes or so. 4 servings

    Made these tonight, and they were fabulous! The flavor is really unique -- if you have blue-cheese haters, I don't think they'd ever suspect it was hiding in these! I didn't have any green onions on hand, so I just skipped that, but I bet that will add some great flavor as well.
