3 slices bread
1 cup applesauce
2 eggs, slightly beaten
1/2 cup finely chopped celery (optional)
4 Tbsp. finely chopped onion
2 tsp. prepared mustard (I use spicy dijon)
2 lb ground beef
Sauce to top loaf (recipe follows)

LAY bread in bowl.
MIX ingredients, except beef and sauce.
POUR over the bread evenly, SET aside (bread will soak up the liquid).
MIX ingredients for sauce to top loaf, set aside.
MIX bread mixture until smooth, add ground beef. Shape into loaves (two works better than one). With a spoon, make crescent indentions in top of loaf; pour sauce on loaf.
BAKE at 350 for about an hour and 15 minutes.
SAUCE TO TOP LOAF:
1/2 cup applesauce
1 Tbsp brown sugar
1-1/2 tsp vinegar (any)
1/2 tsp prepared mustard
The sauce is optional. It will still be wonderfully moist and sweet without it.
