    1 cup diced onion
    1 lb extra lean ground beef
    4 garlic cloves, minced
    1/2 cup bbq sauce
    1 can (15 oz) diced potatoes
    1/2 tsp black pepper
    1/2 tsp chili powder
    1/8 tsp cayenne
    16 canned biscuits (small)
    1 cup reduced-fat cheddar cheese, shredded

    Preheat oven to 400 degrees. Spray a large skillet with nonstick spray, and cook onion, beef and garlic until beef is no longer pink. Drain. Place meat mixture back into skillet and add the bbq sauce, potatoes and seasonings. Cook until hot. Stir in cheese and remove from heat. Spray a muffin tin with nonstick spray. Flatten each biscuit with the palm of your hand and place into a muffin tin. Place 1/4 cup of the meat mixture into each biscuit. Bake for about 15 minutes or until biscuits are golden brown.

    Makes 16, 4 pts. each
