    2 or 3 lbs. beef brisket
    3 cloves garlic, minced
    Ground black pepper to taste
    1 Tbls. vegetable oil
    2 large onions, sliced
    1/2 cup red wine
    1/2 cup beef stock
    1 cup chili sauce
    1/2 cup apple cider vinegar
    1/2 cup brown sugar
    1 or 2 bay leaves

    Recipe



    Spread the minced garlic and pepper on both sides of brisket.

    Heat oil in a flame-proof roasting pan over medium-high heat. Add the brisket and onions. Brown meat on both sides, about 3 or 4 minutes on each side, then remove from pan.

    Turn heat down to medium and cook the onions about 5 minutes more until they are very brown. Add the wine and beef stock to the onions and cook for about 2 minutes. Then add the chili sauce, apple cider vinegar, brown sugar and bay leaves.

    Return meat to the pan and spoon sauce over it. Cover the pan tightly and roast in 325 degree oven for 3 hours.

    Remove pan from oven, uncover and let cool in the pan. Refrigerate overnite.

    Slice the meat and return to sauce. Reheat in a 350 oven for 25-30 minutes.
