6-7 slices bacon, cooked crisp and crumbled
1/2 cup onion, diced small
1/4 cup dill pickle, diced small
4 thin-sliced sirloin tip steaks
spicy brown mustard as needed
2 cups beef broth
1/4 cup dry red wine
2 tbsp. cornstarch mixed with enough water to make a slurry

Combine bacon, onion & pickle, set aside.
Spread steaks with mustard; divide bacon/onion/pickle mixture equally among steaks and spread evenly. Roll up steaks & secure with a toothpick. Saute in same skillet used to fry bacon.
When browned on all sides, add broth & wine; reduce heat, cover & simmer for a couple hours until tender.
Remove rolls from broth and keep warm; thicken broth with cornstarch slurry. Cook & stir for a minute or two, then add sour cream & blend.
Ladle gravy over beef rolls & serve.
