    Life Preserver Meat Loaves

    Source of Recipe

by Mercyteapot, from Taste of Home magazine, July/August 2003

    List of Ingredients

    1 egg
    1 can (5.5 oz) spicy-hot or picante V-8
    1/4 cup milk
    1 cup seasoned bread crumbs
1.5 tsp seasoned salt (ie Lawry's)
    1 tsp chili powder
    1.5 lb ground beef
    ketchup and mustard

    Recipe

In a large bowl, combine the first six ingredients. Crumble ground beef over ingredients and mix well. Shape into six balls; flatten slightly. Make a hole in the center of each ball with the end of a wooden spoon handle. Place in a greased 15 in. x 10 in. x 1 in. baking pan. Bake, uncovered, at 350 degrees for 25-30 minutes or until meat in no longer pink and meat thermometer reads 160 degrees. Decorate with ketchu and mustard (the pic in the magazine shows a band of mustard around the diameter of the loaf and three strips of ketchup poured over the loaves and running from top to bottom; look at a picture of a life preserver and the design will be obvious)

You could use this method with any meatloaf recipe you like. I used chili sauce instead of ketchup for the decoration.
