MEXICAN MEATLOAF

List of Ingredients
2 lbs. lean ground beef or turkey ( we use turkey as I am trying to lower my cholesterol)
1/3 cup taco sauce or salsa
2 Tbs. taco seasoning or spice (If you want to cut salt out, just use chili powder and powdered cumin)
1 egg, slightly beaten
1/2 cup low-fat shredded cheese, montery jack or cheddar (I use 75% low fat Cabot sharp cheddar)
Recipe
Mix ingredients together. Shape into a loaf in a baking dish that has been sprayed with Pam. Cover with salsa. Bake at 350* for one hour. Let set about 5 minutes before slicing.
