2 # lean ground beef
½ # ground pork
6oz pancetta, diced very small
6oz prosciutto, sliced thin n’ chopped
3 eggs
1 C chopped parsley {or dried to taste}
3 cloves garlic, crushed
1 C bread crumbs soaked in 1 C milk
salt & freshly ground black pepper to taste
¼ C olive oil for browning
Recipe
Mix all ingredients together, shape into balls & brown in the oil. Place in sauce of choice & simmer about ½ hr or so, til heated through.
