    Spaetzle w/Pot Roast

    Pot Roast:
    You can do this one of two ways - my favorite (and time saving) way is in the crockpot - it comes out sooooooooo good! AND...you can just put that together in the morning and let it cook all day. OR...you can do it my oma's way which is:

    Brown 1 stick of butter in a large pot, brown roast on all sides, add 1 onion (you can add carrots too for flavor, oh yeah, and don't forget the gaaaaaaahlic). Once the roast is browned on all sides, turn to medium low heat. Don't cook too fast. Add salt and pepper all over and cover. Every 15 minutes add some water (I would say 1/2-3/4 cup)

    Spaetzle:
    This is also one you can do one of two ways - either with a spaetzle press (looks like a huge garlic press) or with a wooden board and knife (that's oma's way and it also takes FOREVER!) Anyway...take 2 cups of flour (regular old flour) and make a hole in the middle of it. Put eggs in the hole (use 1 egg per cup of flour). Add a little salt to taste. Add water (a little at a time), beat eggs (kind of scramble them in the hole). Work from the middle of the hole outward, adding water as needed. Your batter should almost be the consistency of dough...it should "break off" when you lift the spoon out.

    Boil water in a large pot with a little salt. Place some of the dough (as much as will fit) into spaetzle press and press small amounts into the water. Once they are in the water they will float, once floating leave them in for 1 minute, remove to a strainer then toss with butter (so they won't stick). Oh yeah - I forgot the important part...bread crumbs...brown some bread crumbs w/butter and toss the spaetzle with them.

    Gravy:
    Another one of two ways! You can use any brown gravy mix (I prefer the Knorr mushroom gravy) OR once again Oma's way:

    Use COLD water...1/4 cup flour and small scoop of sour cream. Mix w/fork and COLD water, remove any lumps. Add small amounts of water at a time and mix. Add 1/2-1 bottle of gravy master (Kitchen Bouquet) and there you have it......
