1 beef round or boneless chuck steak, cut 3/4" thick
1 tbsp. vegetable oil
3/4 tsp. salt
1/2 tsp. dried thyme leaves
1/4 tsp. black pepper
2 cups chopped onion
1 or 2 medium jalapeños, cut in 1/8" slices*
1/4 cup water
4 or 5 cups canned tomatoes, drained & chopped
1 green or yellow bell pepper, chopped
3 cups cooked bowtie pasta
1 tbsp. chopped fresh parsley

Heat oil in dutch oven and brown meat, adding salt, thyme & pepper. Pour off excess drippings. Top with onions & jalapeños, add water, cover tightly and bake 45 minutes at 325°. Add tomato & bell pepper, cover & bake until steak is tender. Serve over pasta & garnish with parsley.
