    Spinach - Stuffed Flank Steak

    List of Ingredients

    6 slices Bacon
    1- 1.5 pound beef flank steak of top round steak
    10 oz Frozen chopped spinach thawed and drained
    1/4 cup parmesan
    salt and pepper

    Recipe

    In a large skillet cook bacon til done but not crisp, drain on paper towels.

    Score meat by making shallow diagonal cuts at 1" intervals in a diamond pattern- repeat on other side. Place meat between 2 pieces of plastic wrap--use flat mallet to pund steak into 12x8" rectangle. Remove plastic wrap; sprinkle with salt and pepper.

    Arrange Bacon lengthwise on steak, Spread spinach over bacon. Sprinkle with parmesan cheese. Roll up from short side. Secure with toothpicks at 1" intervals -- cut between toothpicks into 8 1" thick slices.

    Place slices, cut side down, on rack of a broiler pan. Broil 3-4" from heat to desired doneness, turning once. (Allow 12-16 minutes for medium)

    Before serving, remove toothpicks.

    This goes well with Rice or a nice green salad
