4 large bell peppers
1/4 cup diced onion
butter as needed to sauté onion
4 tbsp. converted rice
1/2 cup water
1 pound ground beef
1/2 tsp. salt
1/8 tsp. pepper
SAUCE:
1/4 cup butter
2 tbsp. flour
2 tsp. sugar
1/2 tsp. salt
1/8 tsp. pepper
1½ cups tomato juice

Prepare peppers by carefully cleaning out seeds & insides - try not to break the shell.
Sauté onion in butter, add rice. Cook & stir for a minute or two, then add water, cover and cook 10 minutes. Remove from heat and add ground beef, salt and pepper - mix well.
Gently fill peppers with meat mixture - don't pack too full.
Sauce: Melt butter in dutch oven, blend in flour, sugar, salt and pepper until smooth. Gradually add tomato juice; cook and stir until mixture begins to thicken.
Place peppers in sauce and spoon some of the sauce over tops of peppers. Cover and simmer one hour on top of the stove, or in the oven at 350°.
