Nanas Whole Wheat Banana Bread

Recipe Introduction
Not a typical banana bread… more of a sandwich bread. The banana lends texture more than flavor in this recipe.
List of Ingredients
1 ½ lb loaf setting
½ cup warm water
1 T canola oil
3 T honey
1 egg
1 t vanilla
1 ¾ cup plus 1 T whole wheat flour
1 cup bread flour
1 small banana (if it makes mixture goopy slowly add extra flour till right consistency is met)
½ t salt
2 ¼ t yeast
Recipe
Slice banana into the bread pan. Add water. Beat egg slightly, add oil, vanilla, honey and salt; mix well. Add egg mixture to bread pan. Add flours on top of egg mixture. Make a small well in the flour and dump yeast in well. Start regular white cycle. Be sure not to use the fast cycle for this recipe. It needs the extra kneading time the regular cycle provides.
(MTP’s note: don’t worry if this mixture looks wetter than usual. On the other hand, it shouldn’t be soupy. The easiest way to avoid a final product that is too moist to stay together or too dry to be palatable is to be sure that you use a small banana. This is one of those recipes where your instinct will be your best guide.)
