    Banana Bread

    List of Ingredients

    1-1/2 cups flour
    1-1/4 tsp. baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/8 tsp. salt
    2 egg whites, slightly beaten
    3 ripened bananas, mashed
    1/4 cup honey
    1 tsp. vanilla
    3/4 cup sugar
    1/4 cup cooking oil

    Recipe

    Preheat oven to 350 degrees.

    In medium mixing bowl, blend together flour, baking powder, baking soda, cinnamon and salt. In a large mixing bowl, blend together egg whites, bananas, sugar, honey, vanilla and oil. Stir flour mixture into banana mixture until moistened.

    Spray an 8x4x2 loaf pan with non-stick cooking spray. Spread batter in prepared pan and bake at 350 degrees for 45-50 minutes or until butter knife inserted into the center comes out clean. Cool bread in pan for 10 minutes. Remove from pan and cool thoroughly on a wire rack.

    For easier slicing, wrap the bread w/plastic wrap and store overnight.

    Note: My friend doubled this recipe and prepared it in a bundt pan. So I did it this way too and baked it an hour.
