I've made this so many years I can barely read this page of the cookbook ... splatters, y'know...
List of Ingredients
1/2 cup shortening
1 cup sugar
2 eggs
3 tbsp. sour milk or buttermilk
1 cup mashed bananas (2 or 3 bananas)
2 cups flour
1 tsp. soda
1/2 tsp. salt
1/2 to 1 cup chopped nuts
slightly larger & richer version in case you have more ripe bananas:
3/4 cup butter or margarine
1½ cups sugar
1½ cups mashed bananas (4 to 6 bananas)
2 eggs
1 tsp. vanilla extract
2 cups flour
1 tsp. soda
1 tsp. salt
1/2 cup buttermilk or sour milk
1/2 cup chopped nutsRecipe
Small version:
Cream together shortening, sugar and eggs. Stir in milk and bananas. Sift dry ingredients together and addd to first mixture. Blend in the nuts. Pour into well greased medium loaf pan. Let stand 20 minutes before baking. Bake 1 hour at 350°.
Larger version:
Cream together butter & sugar. Add bananas, eggs and vanilla. Sift together dry ingredients and add alternately with milk. Fold in nuts. Pour into well greased loaf pan and bake 1¾ hours at 325°.
