    Breakfast Muffins

    List of Ingredients

    2 cups chopped apples
    1-1/3 cups sugar
    1 cup chopped cranberries
    1 cup shredded carrots
    1 cup chopped walnuts
    2-1/2 cups all-purpose flour
    1 tablespoon baking powder
    2 teaspoons baking soda
    1/2 teaspoon salt
    2 teaspoons cinnamon
    2 teaspoons ground coriander
    2 large eggs, beaten
    1/2 cup vegetable oil

    Recipe

    Preheat oven to 375 degrees Fahrenheit. In a large bowl, mix apples and sugar; set aside. Grease a 12-cup muffin tin or line with paper cups. Add cranberries, carrots, and nuts to apple mixture; stir well.

    Combine dry ingredients and add. Stir in eggs and oil, and mix gently but thoroughly. Divide evenly among muffin cups. Bake for 25 to 30 minutes. Cool for 5 minutes in pan and remove to wire rack. Delicious served with cream cheese.

    Makes 12 muffins.
