Calzones

List of Ingredients
Dough:
1-1/2 cups water
2 tablespoons olive or vegetable oil
2 teaspoons salt
2 teaspoons sugar
4 cups bread flour
4 teaspoons bread machine yeast
Filling: (I don't use this, but here it is)
1/2 cup seasoned pizza or pasta sauce (I use one of those little cans of pizza sauce)
1/2 cup mozzarella cheese, shredded
1/2 cup green peppers, finely chopped
1/2 cup pepperoni, sliced
1/2 cup mushrooms, sliced
Recipe
Add ingredients for dough to machine according to manufacturer's directions. Select Dough cycle. When dough cycle is complete, remove dough to floured surface. Cover and let rest for 5 minutes.
Divide dough into 8 equal portions. On floured surface, roll each portion to 6-inch circle. Spread 1 tablespoon sauce evenly over bottom half of each round leaving a 1-inch border uncovered at edge. Srinkle remaining fillings over sauce, dividing evenly. Fold dough over filling to make half-circles. Pinch or crimp edges to seal; prick tops several times with fork or sharp knife. Place on baking sheet, greased or sprinkled with cornmeal.
Here, I also deviate from the recipe. It doesn't tell you to use an egg wash, but I brush the top of each calzone with a mix of cold water and egg white.
Bake at 400° on center oven rack for 25-30 minutes. Let stand for 10 minutes before serving.
(I definitely use more cheese than 1/2 cup...in fact I use about 1-1/2 cups! For the boys' calzones I use about a pound of browned Italian sausage and for me I've been buying the ready-cooked Lloyd's BBQ chicken in a tub. YUM! You really can fill them with anything you'd like. I tried frozen veggies once with provolone cheese for me and they were good, too. I'm going to try artichokes or spinach and mushrooms for me some time, too.)
