    Carolina Biscuits

    Real country biscuits. Makes 24 small or 16 large.

    List of Ingredients

    2 cups self-rising flour, sifted
    3/4 to 1 cup milk or buttermilk
    2/3 cups vegetable shortening

    Recipe

    Preheat oven to 450°. Grease large baking sheet.

    Combine flour and shortening in mixing bowl and blend until size of small peas using fingertips, 2 knives or pastry blender. Add enough milk to make dough soft and slightly sticky.

    Shape dough into ball. Turn out onto lightly floured surface and knead briefly until dough is pliable, flouring hands to prevent dough from sticking.

    For hand shaping: Pinch dough off in pieces the size of a small lemon. Pat gently into round, dome shape, smoothing top lightly with fingertips.

    Using biscuit cutter: Roll dough out on lightly floured surface to 1/2“ thickness. Cut into rounds.

    Bake til golden brown, 12-15 minutes.
