    Cranberry Cream Cheese Muffins

    List of Ingredients




    * 1 c. butter, softened
    * 1-8 oz. pkg. cream cheese, softened
    * 1 1/2 c. sugar
    * 1 1/2 tsp. vanilla
    * 4 eggs
    * 2 c. flour
    * 1 1/2 T. baking powder
    * 1 1/2 tsp. salt
    * 2 c. fresh or frozen cranberries, dusted with 2 T. flour
    * nuts (optional)

    Preheat oven to 350°. Line pans with liners or spray with non-stick spray. In bowl, beat together butter, cream cheese, sugar and vanilla. Add eggs one at a time, beat well after each. Combine flour, baking powder and salt. Add to butter and mix gradually. Fold in cranberries and nuts if desired. Bake 25 to 30 minutes or until golden. (Test with toothpick) Let muffins stand on rack about 3 minutes before removing from pans. Makes 24 muffins. Blueberries or raspberries may be used instead of cranberries.
