    Kaiser Rolls from Ell

    List of Ingredients

    2 tbsp. yeast
    1 tbsp. sugar
    2½ cups warm water

    2 tbsp. melted shortening or oil
    2 tsp. salt
    3 cups bread flour

    3 egg whites, stiffly beaten
    4 cups more bread flour

    1 more egg white
    1 tbsp. cold milk

    1 cup ice cubes

    Recipe

    Dissolve yeast and sugar in the warm water, let set 10 minutes. Add shortening, salt and 3 cups flour - beat well for 2 minutes.

    Fold in beaten egg whites, then add remaining flour, 1/2 cup at a time, beating well after each addition. Knead dough for about 8 minutes. Allow to rise until double in bulk. Deflate and allow to rise again until double.

    Deflate dough and divide into 18 equal parts. Roll into balls and place on greased cookie sheet, flatten balls quite a bit. Allow to rise 30 minutes, turn buns over and allow to rise 15 more minutes. Cover with damp cloth and allow to rise until double in bulk. Mix remaining egg white with milk and pat it on the risen rolls.

    Preheat oven to 425° and place shallow pan in bottom of oven. Place ice cubes in shallow pan, and bake rolls for 15-20 minutes, or until golden brown. Cool on racks.
