    List of Ingredients

    2 cups rolled oats
    1/3 cup molasses or sorghum
    2 tsp. salt
    2 tbsp. shortening or oil
    1 1/2 cup boiling water
    1 1/2 cup flour
    1/2 cup gluten
    2 pkgs. active dry yeast
    1 cup nonfat dry milk solids
    1 1/2 water warm water
    3 1/2 cups more flour

    Recipe

    Combine oats, molasses, salt & shortening; pour boiling water over and cool for 10 minutes.

    Combine flour, gluten, yeast and dry milk, stir together well, add warm water and mix well. Add oatmeal mixture and mix well. Knead in remaining flour; allow to rest 10 minutes, knead again until smooth and elastic, about 8 minutes. Cover and let rise in a warm draft-free location until double in bulk. Punch down, shape into loaves and let rise until double in bulk.

    Bake 40 minutes at 350°
