    2 cups sourdough starter
    3 cups all-purpose flour
    1 1/2 tsp salt
    1/2 tsp instant yeast
    3/4 cup warm water, more or less

    Combine all ingredients, stirring to mix well, then let the mixture sit for 20-30 minutes, allowing the flour to absorb the water before you start kneading. Try not to knead in any more additional flour than absolutely necessary to keep it from sticking to your hands. If you're using a dough hook it's no problem - you don't need ANY extra flour. Knead 6-8 minutes, then turn the dough into a bowl and spray the top with cooking spray, cover with a towel and allow to rise for 2-3 hours, by which time it should have nearly doubled.

    Turn the dough onto a lightly greased surface, knead it a few times and then divide it in half and form into two balls. Cover and allow to rest again for 20-30 minutes. Form into loaves; place on baking sheet dusted with cornmeal, spray surface of dough with cooking spray, cover with towel, and allow to rise again for 2 hours or so.
    Preheat oven to 475F. When ready to bake, smooth melted butter or margarine over tops of loaves if desired, make two or three slashes diagonally across the loaves and bake 20-25 minutes, turning the oven down to 450F after the first minute or two. Brush again with meled butter or margarine when baking is done. Cool completely for best flavor, and best eaten the same day -
