    Tiny Fruit Aloha Muffins

    List of Ingredients




    2 cups Bisquick
    1/4 cup sugar
    3 Tbs soft butter or margarine
    1 egg
    3/4 cup milk
    1/2 cup toasted grated fresh coconut -OR- 1/2 cup well-drained crushed pineapple

    Recipe



    Heat oven to 400 degrees F. Mix Bisquick and sugar; cut in butter. Add egg and milk; beat vigorously 30 seconds. Fold in coconut or pineapple. Fill tiny greased muffin pans 2/3 full. Bake 12 to 15 minutes. While still warm, frost with Easy Creamy Icing. Sprinkle either toasted fresh coconut or coarsely chopped macadamia nuts over top.

    Makes 3-4 dozen


    BANANA MUFFIN VARIATION:
    Omit milk, coconut and pineapple; add 1 cup mashed very ripe banana to batter.

    EASY CREAMY ICING:
    Blend 1 cup sifted confectioners' sugar, a pinch of salt, 1/2 tsp vanilla and liquid to make easy to spread (about 1 Tbs water or 1-1/2 Tbs cream).
