Apple Pancakes with Cider Syrup

PANCAKES:
2 cups buttermilk pancake mix
1/2 tsp ground cinnamon
2 eggs
1 cup milk
CIDER SYRU
1 quart apple cider, unsweetened
2 cups sugar
1 tsp. pumpkin pie spice
1/4 cup lemon juice
1 large apple w/peel, cored, grated
Recipe
Pancakes:
Preheat electric skillet or griddle to 350°.
Combine pancake mix with cinnamon in a medium mixing bowl. Add eggs & milk, mix with wire whip or hand beater until blended - do not overbeat. Stir in grated apple. Fry on lightly greased hot griddle or skillet until golden brown, turning once when surface is bubbly and edge start to dry. Serve hot with cider syrup.
Cider Syrup:
Combine ingredients and bring to a boil. Over medium-high heat, continue boiling up to 220° on candy thermometer, or until it begins to thicken a bit, about 30 minutes. Serve warm with apple pancakes.
(Quick method for cider syrup: Add 4 tbsp. cornstarch to sugar before mixing with other ingredients. Stir constantly as syrup comes to a boil and continue stirring while you cook it 2 more minutes. Remove from heat and stir in 1/4 to 1/2 cup butter or margarine. This method gives a thickened consistency more like gravy, but still a good flavor - it just doesn't soak up the pancakes the way real syrup does.)
