Bacon & Egg Breakfast Bars

Recipe Introduction
These reheat well, and are a good quick breakfast for camping trips etc.
List of Ingredients
1 pound bacon, snipped & cooked crisp
1/4 cup brown sugar
1/4 cup butter or margarine
2/3 cup flour
1/2 tsp. salt
2/3 cup quick oats
3 - 4 oz. cream cheese
1/4 cup milk
8 eggs
Recipe
Preheat oven to 400°, butter an 8x8 square pan and reserve 1 tbsp. of bacon grease after cooking the bacon.
Cream together butter and brown sugar; mix in flour, salt and quick oats. Divide mixture and press half of it into the baking pan. Whip the cream cheese together with the milk & then add the eggs. Pour this mixture into the skillet with the reserved bacon grease and cook gently over low heat, stirring constantly, until it begins to thicken - do not overcook. Add bacon to egg/cheese mixture and spread it over the oatmeal crust. Top with remaining oatmeal mixture, crumbling it evenly over all. Bake 20-25 minutes. Cool slightly and cut into squares.
